Have you ever been lucky enough to enjoy tinned octopus, or mussel or sea bass conserva in a tapas bar in Spain, perhaps with a glass of Cava or Albariño or one of those wicked Spanish Gin & Tonics to wash it down? If so, you know that seafood conserva is no joke. Although seafood conserva is admittedly more popular in Europe and Asia, the United States is slowly catching on to the notion that tuna isn’t the only worthwhile fish in a can, and here, restaurants are leading the way. At Saltie Girl, which Chef Kyle opened in Boston in 2016, he curated a list of over 160 tins, i.e., the “largest tinned seafood collection in New England.” We’ve asked him to create for us a 13-course offering incorporating some of the best tins from around the world. $225 per person including food, wine pairing, taxes and gratuity.
